Targeted pectin depletion enhances the potential of high-pressure homogenization to increase the network forming potential of tomato cell wall material

The current study addresses the influence of pectin depletion on potential high-pressure homogenization (HPH) to increase network forming cell wall material (CWM) from tomato. Therefore, microstructure, water binding capacity and viscoelastic properties alcohol-insoluble residue (AIR) unextractable fractions (UFs) obtained after different levels methods extraction were determined in suspension before functionalization by HPH. Before HPH, AIR UFs solvent-based all characterized particles displaying cell-like morphology storage modulus (G′) respective suspensions was maximal at partial depletion. CWM could only be increased HPH when extensive disruption realized instead mainly breakage. Even higher pressure applied (up 80 MPa), preceding weakening a prerequisite favor efficient during above deformation Apart effect as such strength, impact conditions (e.g., acid high temperature) residual seemed important. This had repercussions functionalize CWM. While G’ decreased upon (evaluated 20 MPa) for non-pectin-depleted or partially pectin-depleted generated using mild conditions, clear observed which extensively harsher conditions.
